We had lots of chicken in the house so I was trying to find something to make to go with it, then stumbled onto Seco de Pollo which seems to be an ecuadorian staple, like meatloaf in the states…but tastier. It is made with a comination of beer and orange juice – a bit different – but, we happened to have all of the ingredients in the house, so I was able to make it 🙂
