BOSNIA – Chicken Bosnian Style

Working our way through the B’s. Today was Bosnia and Herzegovina on the Balken Peninsula. Much of the food was heavy and in phylo or with red meat (which my husband does not eat – so it makes it more challenging to find recipes sometimes…like in this case). I settled on a Kljukusa, which is like a cross beteewn a Jewish potato kuggle and potatoes au gratin – but with no cheese and grated potatoes instead of sliced. Tasty. Found a very poorly written chicken recipe – that was missing many of the steps and the recipe clearly had some problems so I adjusted the chili powder down from 2 T to 2 tsp and 2/3 c flour to a sprinkle. (they probably meant to say dust the chicken in the flour, but didn’t) chicken bosnian style, Probably a Bosnian version of chicken caccatori but with scallions instead of onions and the addition of lemon juice and chili pepper. For dessert, looks like Tufahije, poached apples stuffed with a ground walnut mixture, is the most typical dessert there…along with baclava. It actually had a nice texture and taste. Would make it again.   1. Wow, another great dinner. I think I have apples that are calling to be poached, need to be poached…hmmm…

    1. They were way tastier than I would have expected. One hint, you end up with a lot of poaching syrup which is tasty. It can keep for quite some time in the fridge – so you can use it for other things too – poaching other items or soaking cakes etc
