So excited to move on to the C’s with our cooking adventure that we almost accidently skipped our last B – BULGARIA. Thank goodness we didn’t skip it, because it was one of Scott’s favorite meals so far. We had an eggplant dish called KYOPOOLU. It consists of roasted eggplant and pepper combined with tomato – all finely chopped and then sitting in vinegar and oil. It was a bit tangy, but tasty all the same. Presented it on a bed of lettuce and it looked nice. For the main dish, we had what they described as a lentil stew, but there was actually no liquid. Both were tasty. Eva loved the lentil stew too.,
