COLOMBIA – Sudado De Pollo

Our Colombian adventure was not only fabulous (all of us enjoyed it) but it was so good that it made it to our top 10! We had not planned to do Colombia until a bit later, but I had some defrosted chicken in the fridge so I looked up Colombian chicken recipes and stumbled upon Sudado De Pollo, https://www.all-thats-jas.com/colombian-chicken-stew/ which is apparently a very typical chicken and potato stew that often has yuca in it too. It was very easy to make – 1 pot, and very tasty. Most of the ingredients are things you might find at home (onions, peppers, tomatoes, potatoes). It calls for chicken stock but you can also use water or use water and add a chicken stock cube. All of the recipies were the variation on the same theme. The only ingredients you might not have handy are sazon goya con azafran (we always have that on hand but need to find an alternative as we are boycotting Goya after we use up what we have at home), cilantro and avocado. The fresh avocado with it was a refreshing touch and I would highly recommend it. As you may know from reading my blog, not all of the recipes I try are well written. This one actually worked well and was quite flavorful. We served it over rice and ladled the sauce over it so it was in a bath or sauce. Quite filling too.

    1. Sadly/happily yes. Sad because I love their products, but happy – or at least at peace with the idea because the owner is abominable and there is no way in good conscience I could support that company. I boycott Barilla too…and am one of those awful people who when I am in the store (which I have not been since the first week of March) actually encourage people who I see buying their products to boycott them and share why. Salvation Army too.
